Their height, in comparsion to each other, is it correct according to official canon?
I know that the Space Marines are nearly 3m tall, enhanced humans made from the god emperors genetic material, but whats about the Sisters of Battle are they "ordinary" humans or have they been changed in any way? (As far as my Tabletop-Game-knowled goes they are "normal" women chosen to be the Eclessiarchys Soldiers, which used a loophole (no men under arms) to get its own army.)
Yes, they are normal girls. They just get armor and weapons like Space Marines, but they don't go through the ridicules picking process or the genetic enhancements (Black Carapace) - this should made them weaker, except it doesn't.
As unlike their brothers, Siters of Battle actually get powers from Emperor - so when they shout "For the Emperor", its not just some buff to morale - they get engulf in holy light reflecting enemy attacks, firing flames from their weapons and blinding all the opposition.
Not to mention they got resurrections and Emperor is turning them into actual Living Saints (SM had maybe one - if Sanguinus counts, but he got owned by Horus), an angel like beings that are strongest warriors of Imperium, leading entire crusades across multiple sectors - followed then not only by SoB, but also IG, Inquisition and Astartes or any other force of Imperium.
GKs on the other hand, are super-secret space marines, dedicated only to fighting Chaos. They are made directly from the emperor - so they are like chapter of primarchs, except they aren't chapter at all, its just what Inquisition assign them as - Chapter 666 during Dark Founding. They got best equipment from all kinds of sources - Inquisition, Mechanicius, Eldar, etc... But as they are to be kept a secret, any force fighting with them (with exception of those of Inquisition - SoB and Deathwatch) are expect to die.
That means a moment some Guardsmen saw a Grey Knight, he is expected to fall in that battle, if he doesn't Inquisition will deal with that problem later. SM are expensive to waste like this, so they get option to get mind wiped, but if they refused they get all killed as well.
At the end I would say the height is about right, if you count that GK is 3m high and SoB can have 1.8m ?

Its the battle for Armageddon, where Gks are send to destroy Angorn and his bloodthirsters vanguard. 300 of them dies, before they banish the Daemon Prince at last. But Inquisition wants to have everyone executed, so they can't talk about GKs and neither the Angorn (as no one actually knows about chaos, let alone fallen Primarchs)
The Space Wolves freak out there because of it, and Logan i think even kills GKs Grand Master and Inquisitor. I am actually surprised Space Wolves are't yet declared excommunicated traitors and hunted down by GKs or SoB... though it might be not far away.
Is it for turning the Necrons into a bunch of undead feudal rulers with minor property issues, instead of letting them be the nonredeemable, emotionless, death bringing, eternal robotic slaves of beyond-evil, life consuming Gods?
yes but personally the whole reason I hate Matt Ward is: he makes C'Tan gods shards. and undead feudal rulers with minor property issues coexists(albeit clashing) with unredeemable, emotionless, death bringing, omnicidal, eternal robotic slaves of beyone evil, life consuming gods is decent for Gameplay reasons
